Azure 45, the hotel’s acclaimed modern French restaurant, has opened its doors once again, showcasing a distinct new look following a major refurbishment. Inspired by an “East meets West” design concept, the new restaurant has been transformed into an elegant haven of rich Japanese textiles, warm woods, washi wall panels and comfortable curved seating.

The décor may have changed but the Michelin-starred restaurant’s culinary offerings remain unwaveringly high quality: served up to guests is an exquisitely visual and creative take on modern French cuisine, as masterminded by Chef de Cuisine Shintaro Miyazaki.

The mesmerizing views across Tokyo from its 45th floor vantage point – after which the restaurant is named – continue to take center stage.

My goal is to spread French cuisine around the world from Japan. Needless to say, by living in Japan, elements of my French-style cooking have been influenced by Japanese touches – from techniques to ingredients. Japanese chefs across the globe are now increasingly valued due to their distinct qualities – for example, the painstaking attention to details and subtlety of flavors.

An exciting addition to Tokyo’s rich culinary scene, Towers is a contemporary grill restaurant. The new establishment serves luxuriously simple, wholesome and seasonal ingredients, sourced from the most high quality suppliers across Japan and beyond, grilled to perfection by its team of experienced chefs.

In addition to Akaushi prime rib and fresh seasonal fish sourced from local fishermen, the menu includes a medley made of seafood and, perfectly partnered with an expert selection of wine. Other highlights include its relaxed weekend brunch plus a signature lunchtime dessert trolley.

The atmosphere is welcoming and relaxed while the setting is as eye-catching as the food: a clean-lined décor of dark woods, leather seating and abstract metallic sculptures set a contemporary tone.

The new Towers restaurant showcases a grill style in a setting which is not too formal. The idea is to base the menu on the products: so we source the very best ingredients for each dish, mainly from Japan and further afield when necessary. Choosing the right, seasonal ingredient for each item on the menu is very important to me. I’ve just come back from visiting suppliers in Wakayama: a fisherman who sustainably catches big fish such as swordfish, marlin; and also a farmer selling delicious citrus fruits. We have also sourced jams in Nagano and lean and juicy Akaushi red beef in Kumamoto, southern Japan. The idea is simple: we work closely with farmers and suppliers to ensure the very best ingredients.

La Boutique / Chocolates & Pastries

A brand new addition to The Ritz-Carlton, Tokyo culinary credentials, La Boutique Chocolates & Pastries has opened its doors on the 45th floor.

Devoted to the sweeter things in life, La Boutique showcases the exquisite contemporary creations handcrafted by the celebrated French Pastry Chef Jimmy Boulay.

Inspired by an innovative square theme, La Boutique showcases the chef’s signature cakes which take the bold contemporary form of a cubed shape, in a rainbow-bright range of hues. Inspired by a piece of fruit - from a strawberry to a peach – the cake flavors will change with the seasons, in true Japanese culinary style. Other highlights including an exquisite gateau de voyage plus 12 different types of artisan chocolate pralines.

Cakes can either be ordered to go and packed in custom-crafted black boxes – or savored along with a cup of coffee while seated in the atmospheric premises, a sleek modern space with black wall partitions and monochrome striped floors.

La Boutique will open daily from 11 a.m. - 11 p.m., providing the perfect cake-and-coffee pit stop, regardless of the time of day.

Restaurant Pastry Chef

After I arrived in Japan, I saw a cubed watermelon in a fruit shop. I was very inspired by this – and it eventually became the starting point for our new shop. We will be selling a range of cubed cakes and square cakes de voyage – each using a single seasonal fruit, which will change every two months. We will start with Kiyomi orange cakes in March – and this will change to strawberry, peach, pineapple among other fruits. We also have a range of 12 square artisan chocolates, using the highest quality ingredients and flavors. People can stop to buy cakes to take home – or they can stay to enjoy cake and a pour-over coffee, perhaps after dinner.”
